Banana, Date and Raspberry Oaty Bars 

Try out May’s YMCA Early Years recipe of the month, and put your baking skills to the test with Banana, Date and Raspberry Oaty Bars. This recipe is a favourite amongst our children in early years and is the perfect mid-day snack.

Ingredients:

  • 100g chopped dates
  • 75ml boiling water
  • 2 ripe bananas
  • 40g butter or free from spread
  • 75g frozen raspberries (or fresh)
  • 180g oats

Method:

  • Preheat the oven to 160 degrees C
  • Line a 20cm square tin with baking parchment
  • Soak the dates in a bowl with boiling water for 10 minutes
  • Whilst the dates are soaking place the bananas and butter into a food processor and blitz into a smooth paste
  • Add the dates and water into the blender with the banana mixture and continue to blend until smooth. Tip into a mixing bowl
  • Stir the oats into the mixture
  • Place the frozen raspberries into a bowl and crush into smaller pieces with the end of a rolling pin and then mix into the banana date oat mixture
  • Squish the mixture into the tin and then bake in the preheated oven for 20 minutes
  • Let cool to room temperature and chop into little bite size squares
